Two food posts in row?! No! Three! There's another one tomorrow too ;) Honestly, I think the reason why I don't do more food posts (besides having the most restricted diet ever) is that I over think everything. I have a very hard time posting simple 3 step recipes. I don't know why though since I used to do it weekly with Things On Toast (remember when I did that all the time-- before everyone and their mom started doing it. humph. haha). But I think if I can just tell my brain to chill, and realize that even three step recipes are recipes that others might appreciate, then it can happen more! Right before leaving we yanked up a bunch of (super cute) carrots in the garden. Without double thinking, Alex roasted them all up in the oven and made a super simple plate of food. And well, here it is for you guys to hopefully love! This would be great as a snack, for a party, high tea, whatever! :)

edible flowers are the best, aren't they?
-super cute heirloom carrots (preferably tiny ones)
-edibles flowers (check your farmers markets, or sometimes whole foods carries them too, in the herb section)
-fresh mint, basil, or both
-yogurt (we buy unsweetened coconut yogurt-- until I start making my own!)
-pre-heat oven to 450
-place carrots on sheet tray and drizzle with olive oil, salt, and pepper
-roast until carrots are tender--- this will vary greatly depending on the size of your carrots! Check them every 15 minutes or so. Once their soft to pierce with fork, and golden, they're done!
-fine chop/chiffonade your herbs
-place warm roasted carrots on plate and garnish with flowers and herbs.
-place a dollar of yogurt on your plate
-drizzle plate with olive oil and another sprinkle of salt.
And tada! you're done! Serve, eat, feel wonderful and adorable and amazing all at the same time ;)
