A Vegan Kitchen - A Family Friendly Brunch {johnny cakes + skillet apples + onions + fried sage}

In a bigger household, breakfast can be a bit of a traffic jam. For some strange reason, this seems to be the only meal during the day, where no one can agree on what to have. It also happens to be the time, in which certain little people seem to think sugar is a fully recognized food group. Obviously, making 5 different meals is not a reasonable request, and full-on sugar binging is reserved for only the most special (or really lazy) occasions. So, what to do? The only thing we can do, really. Make a totally customizable, sweet, savory, and healthy meal. Something for everyone, in one dish. Yes, really. It can be done. Let us show you how.

johnny cakes + skillet apples + onions + fried sage

for the cakes:
  • 1 1/2 cups white corn meal
  • 1 cup almond milk
  • 1-2 tablespoon agave nectar, depending on your preference. we use less.
  • 2 tablespoons oil ( your choice)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
for the skillet apples + onions:
  • 2-3 medium sized apples 
  • 1/2 small white onion
  • oil 
for the fried sage leaves (optional) :
  • a handful of fresh, whole sage leaves
  • oil
Additional ingredients:
  • maple syrup 
  • fresh jam or berries 

How to:
-In a medium sized saute pan, or cast iron skillet, heat a few teaspoons of oil over medium-high heat. Place apples and onions in pan.  Sprinkle with salt and cook until softened and brown.  Cover and set aside. 

-If making sage leaves, heat  about 1/4 cup of oil over medium heat.  After the oil has had sufficient time to heat (a few minutes) place sage leaves into hot oil.  Let them cook for 1-2 minutes.  Remove from oil and drain on a paper towel.

-Meanwhile heat griddle to 350 degrees.(alternatively, you can use a large skillet over medium heat)
Brush griddle or skillet with oil, after warmed.  Ladle or spoon the corn batter onto griddle.  Allow to set before flipping.  Mixture will become thick and bubbly.  Flip over to remaining side and cook until cakes are done, about 1 minute.

-Serve warm cakes with any apples, onions, sage and maple syrup.  Or if your kids prefer, fresh berries, jam, and/or maple syrup.

  1. So, I was super excited to try this recipe out. I made only the johnny cake part and it was a total flop. I'm trying to determine what went wrong. I followed the recipe precisely except that I used yellow cornmeal. What I came out with was a cornmeal batter that I couls form with my hands. Put on on the griddle and it fell apart on the first turn. Added more almond milk to thin the remainder and still complete crumbs. The crumbs tasted good...but not very presentable. Any thoughts?
