Ah, day two... the day of feeling the pain of over-doing it. On the first night of the trip, I had, for the first time in years, a red bull and vodka... a really freaking big red-bull and vodka. I woke up bright and early still feeling (not so) nice and jittery and ready to go. Yeah, eight am wake up party, after a two am (plus) dancing party. I left the room, took a picture of the sun to try to convince Laura that the sun was shining, dragged her out of bed, and to the pool deck we went... well after a potato, toast, and stir-fry breakfast (why, oh why was there stir fry and miso soup available of breakfast?? I ask, but I ate it... so thats why). Once we felt brave enough to board the tiny boat, we headed over to the tiny beach island for hours of hammock laying. My red bull hangover came and left and we headed back to the main boat. We showered, put on skirts (our "formal" wear), realized Laura had turned into a lobster, and headed to dinner where we toasted to the birthday man, Laura's dad.

Also? Contrary to what I expected, there were no mass amounts of french fries eaten on the trip... not even one french fry was eaten by the two of us. I don't think I mentioned it, but Laura is vegan too... and we did manage to have more than enough food for the two of us. We got by just fine and with more than enough options placed in front of us. Was it all delicious? No, it's cruise food, but it satisfied our needs, it was all relatively healthy, and it was vegan. But you better believe, I am thrilled to be back home and cooking in my kitchen! I want to make nothing and everything all at the same time. I had no idea what to make for dinner tonight and I think I over did it a bit with: bbq tofu (bbq sauce made from scratch), creamed spinach with chickpeas (first time ever making it. so good), roasted paprika potatoes, and pea/potato/chickpea patties. I'm going to start thinking about tomorrows dinner: NOW. (suggestions welcomed)
